Food. It's what keeps us going during the coronavirus shut down. I have never cooked at home so much in my adult life, and I absolutely LOVE IT!

With a lot more time on our hands, it seems we Americans are/were flocking in droves to Google for some delicious recipes. This website, The Daily Meal, says that Washington state was searching for sourdough recipes the most during these past few weeks.

I am not even surprised that Washingtonians are searching for sourdough bread recipes more than any other state. There are a decent amount of great bakers, bakeries, patisseries, and panaderías in practically every town here. We know that bread is treasured comfort food, and what we all could use right about now is all the comfort that we can get.

I was surprised though that Banana Bread wasn't the most searched for recipe in Washington state. I've seen more than one person on my Facebook feed asking the universe for banana bread recipes! It was, however, the most searched for recipe in the country. Sounds about right!

Ooh, that reminds me, the other day, I took an online cooking class for $10. The dishes were Asian-inspired and, ugh, I spent WAAAYYY too much on groceries trying to get all the ingredients for the 4 dishes. The first dish was a Spicy Korean Burger (see the recipe below; it is so delicious, it will blow your mind.) The instructors used Portobello mushrooms as the 'burger' and I don't like mushrooms that much, so I went ahead and defrosted some ground turkey and made myself a meat patty. I even put in a splash of Sweet Chili Sauce in my burger seasonings because I was feeling myself. My burger ended up being way too sweet, but I felt proud of myself for trying.

The other cooking class dishes included 'Pina Colada' Ice Cream, Mooshu Tacos, and a Thai Chili pizza with a cauliflower pizza crust (see my recipe below). I have learned one very shocking fact about myself in the process of all this cooking: I absolutely detest cauliflower pizza crust-who knew?!

I am sitting here trying to remember all of the recipes I have been looking up on Google. My memory is failing me, but I know that I have been extra busy cooking in the kitchen since the 3rd week of March when I started self-quarantining myself and my daughter as much as possible.

I have made crockpot chicken chili, crockpot chicken & potatoes, microwaved burritos, air fryer grilled cheese (with tomato soup), air fryer chicken patties, ravioli with vodka pasta sauce, s'mores on the patio (powered by a tealight candle), a garden salad (with shredded cheddar cheese, diced apples, diced avocado, sunflower seeds, and classic croutons with an avocado-ranch dressing).

I also made some more microwaved burritos.

THAI CHILI PIZZA RECIPE:
**Notice that I did not put any meats in the ingredients list. This is going to come in handy for you now that there are rumors of an impending meat shortage.**
PLEASE NOTE THIS, TOO: DO NOT USE A CAULIFLOWER PIZZA CRUST FOR THIS PIZZA unless you like the way a piece of CARDBOARD TASTES. Ye have been warned.

INGREDIENTS:

  • 1 Pizza Crust
  • 1 1/2 cups of Sweet Chili Sauce (found in the Asian food aisle in your grocery store)
  • Sliced or Diced Pineapple to your liking (NO, this is not like eating a Hawaiian pizza, relax)
  • Vegetables of your choice (I used jalapeno slices, diced red onion, frozen corn, and scallions, but you could use red, green, yellow, orange, or red bell peppers, cilantro, etc.)
  • Shredded Cheese of your choice (I used a combination of shredded mozzarella, sharp cheddar, and grated parmesan)

PREPARE + BAKE:

  • Grab a silicone cooking brush thingie and slab all of that good Sweet Chili Paste all over your pizza crust.
  • Next, throw everything else on your pizza in whichever order you like.
  • Then, take the pizza you just made and stick it in the oven at 400 degrees until it looks done to you!
  • Eat it and enjoy it.

ASIAN-INSPIRED SPICY KOREAN BURGER

SLAW INGREDIENTS: In a medium-sized bowl mix together the following:

  • Ginger Paste (just a smallish squeeze)
  • Tablespoon of Rice Vinegar
  • Tablespoon of Sesame Oil
  • Fresh Scallions/Chives (to your liking)
  • Two (or Three) Tablespoons of Mayonnaise
  • 1 1/2 cups of Coleslaw Mix from the Salad aisle
  • Salt+Pepper to taste

BURGER:

  • You already know how to make a burger, come on now! I did, however, add some Italian Bread Crumbs for texture. I also added a couple of dollops of Sweet Chili Paste--but I learned a lesson--don't add too much of that paste because your burger will taste like a strange, sugary snack.

PREPARE + COOK:

  • Cook your burger on medium-high heat until the insides of it are the color you like (I personally like mine well-done.)
  • While the burger is cooking, prepare the slaw.
  • When the burger is done, turn off the heat, sprinkle some fresh or dried onions on the pan, and then place your hamburger buns on the pan you cooked the burger in.
  • Let those puppies heat up and get toasty!
  • Then place the buns on your plate, layer the burger and the slaw, and place the other bun on top.
  • Eat+Enjoy!
