The unboxing for May 7th, 2021 has taken place! There has never been a better time to support local farms. Signing yourself up for a box that is delivered straight to your door takes away some of the shopping stress and replaces it with curiosity. What is Gha Lang anyway? Would I make carrot top pesto? Tried it and didn't like it but maybe you would :)

There are many different companies out there to test, Pacific Northwest West features the option to donate a box to a family in need or sign yourself up. It's a great way to give back to the community and get everyone motivated to eat more fruits and veggies. It might be a tough sell in the beginning but honestly, if you create a cooking date night or challenge the crew to come up with the best sounding meal with what's in the box can be really fun.

The produce is organic and so fresh that a lot of it can be propagated, once the roots show up you can plant inside or outside and start your own garden! So far I have done this with mint, oregano, and basil, grown an avocado tree from a seed, and also am working on a lemon, pomelo valentine, and a grapefruit.

Connecting with healthier foods and learning how to use them in new ways has opened up my palet and inspired me to eat better. Not that I do it all the time but I make a weekly challenge now to polish off as much as I can before the next box hits. What would you do with this haul?

  • Tomato - I'll probably chop up some for my morning scrambles and use a bit for a Caprese salad
  • Basil - Propagate and add to Caprese Salad, possibly breakfast scramble as well
  • Rhubarb - Undecided CLICK-HERE for an incredible Rhubarb Simple Syrup recipe including how to make candied pieces as well as a Rhubarb mint mojito
  • Spring Onion - Propagate some and use for Bahn Xeo or veggie scrambles
  • Strawberries - Slice and toss in sugar for a whipped cream filled dessert
  • Rainbow carrots - peeled and possibly pickled or straight-up munch time
  • Romaine Lettuce - Bahn Xeo, Tuna Wraps, and salad
  • Garlic Chives - Kind of pumped to try out Buchjeon (Garlic Chive Pancakes) I'll keep you posted
  • Gala Apples - I enjoy eating them with a little nut butter or when I am craving something sweet
  • Oranges - Did you know you can dry the peels, blend them up and use them in your garden? Vitamin C added to my coconut silk and chai seed mix should be just the ticket
  • Russet Potato - The hubs loves them so many boiled and mashed or peeled, chopped and cooked for breakfast burritos!
  • Asparagus - I love cooking it up for my breakfast scramble but it's SO good wrapped in tinfoil with lemon and butter on the grill too!

P.S I hear the Farmer's Market Located in the parking lot of the Valley Mall kicks-off this Sunday :)
