Being a fat Caucasian male on Cinco De Mayo, means I don't fully know how to appreciate and celebrate the holiday. I know that, I accept that, and I try to improve upon that. But at least I know I'm not alone. So, I will just go and celebrate as best as I can and enjoy a food that I know for a fact is an authentic Mexican dish... Nachos!

Nachos were first created sometime around 1943 and are of Mexican origin according to Wikipedia. Created by Ignacio "Nacho" Anaya, he was the maître d’ at the El Moderno Restaurant in Piedras Negras. One night after the kitchen staff had taken off, military wives stationed at Fort Duncan came into the restaurant and were hungry for a snack. Anaya made a mash up of triangle cut tostadas, shredded cheese and sliced jalapenos and heated them up and served them up! It was such a hit, the ladies named the snack "Nacho's Special" before he could even make a second batch! Word spread and the rest is history!

However you decide to make it, enjoy it. Do it with a smile. Be lively with it! Don't do it like the host of this Weber Cooks video. Don't get me wrong, the way he makes Nachos, is simple, awesome, and perfect. It just seems so sad. In fact, even before someone went and added sad music to the video, it seemed sad.
