I was a dumb kid growing up. Most kids are, but I was especially stupid.

For MANY YEARS, I thought ‘leftovers’ were vegetables.

I don’t know when it clicked in my head that leftovers aren’t always vegetables, but I believe that my association with the two came from the phrase:

“Noooo! Not leftovers again!?”

Hearing people complain the same way I complained about vegetables when I was little.

Now that you know a little bit of my culinary backstory, I don’t mind leftovers anymore, but it really depends on what the leftovers are.

As my wife and I were talking, the subject of leftovers came up, and she posed an interesting question that I posed to our audience on our Facebook Page.

“What leftovers do you enjoy more than when it was fresh?”

We got several responses; some made my jaw drop. The thought that some people would enjoy them better on the 2nd day.

Things like Spaghetti, Chili, or Tamales.

Certain foods that are cold the next day, right out of the fridge for breakfast, like Pizza and Chinese food, I kind of get (mainly because that is what my wife does).

But now we know which leftover Yakima enjoys the most! Meatloaf!

Meatloaf was overwhelmingly mentioned.

Enjoy it the next day in loaf form, or slice it thinner for a sandwich; you just can’t go wrong!

Easy Meatloaf Recipe:

Here’s a super easy meatloaf recipe my sister-in-law taught me.

  • 1 pound of ground beef.
  • 1 box of Stove Top Stuffing (any flavor, but I like the Savory Herb)
  • 1 cup of water.

Mix it all together, bake in a casserole dish (covered) at 425 degrees for around 40 minutes.

NOTE: I’m never sure on the time, because I’m not a cook, so I just keep checking it. Use a meat thermometer and cut into the middle checking to make sure it’s not still pink and raw.

When it’s done, add whatever youw ant to top it off; ketchup, cheese, barbecue sauce, pepperoni, etc. Throw it back in the oven uncovered to warm the new toppings and enjoy!

Easy Leftover Meatloaf Recipe:

Open fridge, pull out meatloaf. Take it out of storage container and place on plate.

To eat it warm, put it in a microwave. To eat it cold, place it in hand.
