Every single year I wait patiently for Rocky Road Fudge, Mom says it's only for Christmas. I tried to get her to make it for Thanksgiving one year and she just looked at me like I was crazy. I get it though, special desserts aren't as special when you eat them all the time.

What you'll need for Rocky Road Fudge

  • One 12 oz bag of mini marshmallows
  • One 14 oz can of sweetened condensed milk
  • Two tablespoons of butter
  • One bag of chocolate chips
  • Dry Roasted Peanuts (try not to get the lightly salted kind, that was my bad)

You'll also need a spatula, wax paper, the biggest bowl you have and if it is microwavable double bonus and a 9x13 pan.

I've managed to break most of my big microwaveable bowls so I used a smaller one for step one which is add your chocolate chips, sweetened condensed milk

to heat in the microwave for three minutes and this is what it will look like

Then you're gonna mix it up real quick until it's combined, if you didn't have a large  bowl microwavable now would be a great time to move it to the big bowl, you'll be sorry if you didn't.

You'll want to move pretty quick so have your two cups of peanuts ready to go

Mix and then pour your marshmallows in the bowl, if you don't have a big bowl they are going to spill out everywhere.

Make sure to use that spatula to grab all the goodies at the bottom of the bowl for even coating and mix enough to coat but not more because the marshmallows are starting to soften, you've got to move it, move it.

Now you're going to pour the entire mixture into your wax paper covered 9x13 pan

Try hard to pour it evenly because the marshmallows are soft and you don't want them to melt while you are evening it out. You can see what that would like on the upper right area.

After you've got it all in the pan, cover it and place in the refrigerator to harden for two hours or more.

If you try and take it out early because you just can't wait, cutting into it will be a nightmare, it will be too sticky and you won't get squares, you'll get blobs.

The wax paper is perfect, less sticky and you can pick up the entire thing and place it on a cutting board

Now that it's on the board you gotta get a big sharp knife for even and cuts

You can have all your trays or containers for storage ready, this can get sticky and you might want to pay attention to the wax paper because occasionally it will get stuck to the bottom of your fudge.
